Gluten Free Dark Chocolate Chunk Cookies

I love making these cookies! They are super fast and easy to make. They take about 20 minutes start to finish and will satisfy any cookie monster even if they don't eat #glutenfree ! What I used: 1 1/2 C almond flour 1/2 C dark chocolate chunks 1/8 t sea salt 1/4 t baking soda 2 T honey 2 T almond butter 1/4 t vanilla extract 1 egg What I did: I preheated the oven to 350. Guiltless Gluten Free Pie Crust

Who doesn't love that crispy, flaky, slightly salty taste of a pie crust? But along with that comes the saturated fat from the butter or shortening that is typically used. Per usual I was on a quest to recreate a pie crust that was clean yet still flaky and delicious. I think I hit the nail on the head with this one. With only 6 ingredients, it can not get any easier. Plus its #glutenfree. What I used: 1 14 oz can of cannellini beans, drained and rinsed 2 T olive oil 1 T

        Gluten-Free, Dairy-Free Pop-Tarts

As a kid I loved Pop-Tarts. As an adult I would never touch them because of all the preservatives and sugar. Here is a healthier version that is #glutenfree and #dairyfree with real fruit inside. What I used: Crust 2 Cups Gluten free flour (one that is a 1 to 1 trade out for regular) 2/3 Cup of cold vegan butter 4-6 Tbsps ice cold water Pinch of salt Filling 1 Cup frozen organic mixed berries 1 Tbsp raw sugar 1 Tbsp corn starch Glaze 1/2 cup powdered sugar 1/4 tsp vanilla e

        Gluten Free Cinnamon Toast Crunch

My neighbor, who I adore, LOVES cereal and since I insist on everything being clean I decided to see if I could make a clean(ish) version of this sugary guilty pleasure. Here is what I used: 1 Cup almond flour 1/4 Cup coconut flour 1/2 Cup of raw sugar 1/4 tsp salt 1 1/2 Tbsp cinnamon 1 large egg white 2 Tbsp melted coconut oil Here is what I did: Preheated the oven to 425. Mixed all the ingredients together. Formed into a ball on top of parchment paper, cover with another p

        Chicken Ragu

Normally people use a chicken carcass for soups and things like that. I decided to make this red sauce with what was left over from my crock pot chicken. I intentionally left a ton of meat on the bones so that this sauce would be extra meaty! Here is what I used: 1 left over chicken carcass (see Crock Pot Chicken Recipe - I used everything left in the crock pot) 1 chopped onion 4 chopped stalks of celery 4 chopped carrots 1 T olive oil 2 26 oz cartons of strained tomatoes s

        Gluten Free Bread

Even though I am not entirely #glutenfree, I do try to avoid gluten when I can. I love this recipe because I can make it a sweet or a savory bread with out many changes to the recipe. Also, unlike most homemade breads this one doesn't take forever to rise. Just 45 minutes!! What I used: 1 t active dry yeast 1/2 C lukewarm water 2 C gluten free 1 for 1 flour 1/2 t baking soda 1/2 t sea salt 3 eggs 2 T olive oil 2 T apple cider vinegar Everything but the Bagel seasoning What

        #MuffinClub Protein Muffins

I eat these muffins EVERYDAY. They are the perfect ratio of protein, carbs and fat, but besides that they are delicious. Try them and you will see. I batch cook 30 muffins at the beginning of the week so that in the morning its a quick and easy breakfast. Here is what I used: 1/2 Cup of oats 1/2 Banana 2 Large eggs or 2/3 Cup of liquid egg whites 1 T Cinnamon Here is what I did: Preheated the oven to 370. Mixed all the ingredients in the blender and poured into silicone b

        Pad Thai

Pad Thai is so delicious but I am always hesitant to order this dish because it is so high in carbs and fat. Some versions have anywhere between 25 gms to 55 gms of fat per serving and (if noodels or rice are used) anywhere between 40 gms to 97 gms of carbohydrates. I am always trying to find ways to clean up recipes. I came up with the following recipe where I substituted regular peanut butter for Powdered Peanut Butter. If you haven't tried this yet its a MUST! It is dr

        Gluten Free English Muffin

This muffin looks like it came down from heaven and when you eat it you will think the same. A friend of mine shared with me a Paleo English Muffin Recipe that was SO GOOD. Since I am always trying to make recipes clean and healthy I just had to tweak this one a bit. Because it was Paleo recipe it had tons of really great ingredients already so there wasn't much work to be done. What I was aiming to do was to bring the fat content down and increase the protein while still l
