Cumin Shrimp Salad with Corn Salsa

One of my favorite summer dishes! Super easy, fresh and light. Even though its not quite summer yet.....

What I used:

3 oz raw shrimp1/3 cup of corn1/8 cup of red onion, diced1 cup cherry tomatoes, chopped1/4 of an avocado, diced1 lime, squeezed1 tsp ground cumin2 dashes of sea salt1/2 tbsp olive oil2 cups romaine lettuce, chopped


What I did:

In a medium bowl, mixed corn, onion, tomatoes and lime juice. Added avocado and salt and mixed gently so I didn't smash the avocado. In a small bowl, mixed shrimp, olive oil and cumin. Grilled the shrimp for two minutes each side.Poured the corn salsa over the romaine lettuce and added the shrimp!
