Gluten Free Dark Chocolate Chunk Cookies

I love making these cookies! They are super fast and easy to make.

They take about 20 minutes start to finish and will satisfy any cookie monster

even if they don't eat #glutenfree !

What I used:

1 1/2 C almond flour (my favorite is Bob's Red Mill)

1/2 C dark chocolate chunks

1/8 t sea salt

1/4 t baking soda

2 T honey

2 T almond butter

1/4 t vanilla extract

1 egg

What I did:

I preheated the oven to 350. Mixed together the almond flour, salt and baking soda. In a separate bowl I mixed together all the other ingredients except the chocolate chunks (if the almond butter is stored in the fridge I warmed it up a bit to make it easier to mix). I added the wet mixture to the dry mixture and blended until a dough formed. I then folded in the chocolate chunks. Divided it into 12 even balls and pressed down onto a baking sheet lined with parchment paper. I cooked it for 13 minutes and then immediately ate one!
