Blackened Cod Bowl

Lately I have been making a lot of one bowl meals. They are fast and easy and make a super quick clean up. These things are important since I teach most nights until 7:30 pm. To keep things fresh I change up the protein and sometimes the base. My favorite base is a taco bowl (brown rice, black beans, romaine lettuce, black olives, green onions, tomatoes and a lime dressing). See below to get my recipe for the blackened cod I put on top.

Blackened Cod

What I used:

1.5 t smoked paprika

1 t onion powder

1 t garlic powder

1/2 t salt

1/4 t ground cayene

1/4 t dried thyme

1/4 t oregano

1/4 t basil

1/4 t pepper

1 lb cod filet

Spray Olive Oil

What I did:

I first washed then patted dry the cod filet. I mixed all the spices together. I sprayed the fish with olive oil then sprinkled the spice mixture on top. I cooked it on foil in the air fryer at 375 for 10-12 minutes.

I also batch mix the spices and keep it on hand!
