Beet Soup

You can't beat a beet! They're not only chock-full of essential everyday nutrients like B vitamins, iron, manganese, copper, magnesium, and potassium but these ruby gems also are a goldmine of health-boosting nutrients that you may not get anywhere else. Here is a delicious way to get some beats into your life.


Here is what I used:

3 large beets cut in half

4 Cups of water

3 cloves of garlic

2 shallots cut in half

1/2 Cup unsweetened almond milk

2 T apple cider vinegar

Salt to taste


Here is what I did:

In a medium pot I brought the first four ingredients to a boil. Covered and simmered until the beets are soft. Placed all the ingredients into the blender and mixed until smooth. Added the last 3 ingredients and mixed it on last time.
