Mediterranean Salmon

Salmon is one of my favorite fish. Seriously, this fatty fish is one of the most nutritious foods on the planet. It’s packed with protein, healthy fats, and essential vitamins and minerals (like B12 & Selenium). You can grab it at almost any grocery store in all different varieties and throw together a healthy and delicious meal in under an hour.

This is a quick and easy salmon dinner inspired by bright Mediterranean flavors. Make extra and save it for lunch tomorrow or throw it over some greens for a very fancy and filling salad.

This recipe involves a technique called “Fish en Papillote” or Fish in Paper. It means to bake your fish in a parchment pouch with veggies on top to steam them all up and preserve the flavors and aromas. Steaming is also one of the healthiest ways to cook food, as it enhances vitamins and reduced the use of excess fat.

When wrapping up your fish, make sure to use a big piece of parchment paper. I cut my parchment paper too small (oopsie) and had to improvise. I grabbed some twine to tie it shut and not only did it work, it looked super cute.

What I used:

1 and 1/4 lbs of Salmon (wild caught is best)

1/2 cup Artichoke Hearts

1/2 cup Sun-dried Tomatoes

1/2 cup Kalamata Olives

1/4 cup Capers

1/4 cup Pesto Click for my vegan pesto recipe.

1 t Ginger

1 t Dill

1 t Paprika

1/2 t Sea Salt


What I did:

  1. Preheat oven to 400 degrees.

  2. Place salmon on a large piece of parchment paper.

  3. Sprinkle with paprika, ginger, dill, and sea salt.

  4. Arrange all of the veggies on top of the salmon.

  5. Fold the parchment paper over the salmon & veggies. Click for a package folding tutorial.

  6. Bake for 20 minutes. Use a thermometer to check the salmon has reached 145°F internally.
