Vegan Chili that even a carnivore will love!

I used to be #vegan and still at times love to take a little break from eating meat. This recipe is very versatile and anyone who loves chili will enjoy it both ways!!

I made this chili using Beyond Burger "meat" but of course you could use any ground meat.


What I used:

1 lb of Beyond Beef plant based ground

1 can pinto beans, rinsed

1 can black beans, rinsed

1 can kidney beans, rinsed

2 boxed of Pomi diced tomatoes

1 T olive oil

3 garlic cloves, chopped

1 large onion, chopped

1 red pepper, chopped

1 orange pepper, chopped

1 T cumin

3 dashes of cayenne pepper

salt and pepper to taste


What I did:

I heated the olive oil then added the onion and garlic and sautéed until slightly browned.

I then added the tomatoes, beans and peppers. I allowed this to come to a simmer then added the Beyond Beef ground and stirred until it was broken down. I then brought this to a simmer and added all the spices and allowed to slowly simmer for 3 hours.

Then I burned my tongue because I couldn't wait to eat it.
